Koji Salt Rice

Ingredients:

1 cup uncooked rice

1 to 2 cups water: Please follow the instructions for the type of rice you are cooking.

1 tsp Shio Koji

Instructions:

Cook rice as usual, adding Koji Salt into the water before starting.

Benefit: By simply adding Shio Koji add umami depth.

Tip:

Add Shio Koji to rice and water right before cooking. Due to the active enzymes that break down carbohydrates, it becomes mushy if left too long before cooking with heat.
